Introduction
The three major phosphatides in crude soybean oil are PC, PE, and PI present in the ratio of 55%, 26%, and 18%, respectively. Concentration of phytosterols and tocopherols in soybean oil is 2350-4050 ppm and 1257-1370 ppm, respectively. In soybean oil, β-sitosterol (47-59%) and γ-tocopherol (44-60%) are the major phytosterol and tocopherol in soybean oil. Soybean oil contains about 6-8% α-linolenic acid. Research showed that soybean oil consumption led to a reduction in total blood serum cholesterol and LDL cholesterol. The major triacylglycerols in soybean oil are OLL (20%), LLL (19%), and PLL (13%). Crude solvent extracted soybean oil typically has about 2% PLs. The main phytosterols in soybean oil are β-sitosterol (52%), campesterol (25%), and stigmasterol (23%). Two major hydrocarbons in soybean oil are squalene and hexahydrofarnesyl acetone
